08/31 - TSA Puppy Foster Families Needed
TSA's Canine Breeding and Development Center(the Puppy Program!) selectively breeds, raises and prepares puppies tobe future explosives detection dogs within the National ExplosivesDetection Canine Team Program. Dogs that graduate from training areassigned to airports and mass transit systems nationwide. The programis located at Lackland Air Force Base in San Antonio, Texas.
Foster families are needed to help raise puppies between the ages of 10 weeks to 12 months, when they're then old enough and mature enough for explosives detection training.
Interested in Fostering a TSA puppy?
1. You must live in San Antonio/Austin, Texas or surrounding communities.
2. You must have a secure fenced yard.
3. You must live in a residence that permits large breed dogs.
4. There cannot be more than two dogs in the home already.
5. You must show proof of your pets current vaccinations.
6. You must have a vehicle to safely transport the TSA puppy.

It is a violation to commit the following acts on a VIA vehicle, VIA facility or VIA property:
- Smoke or expel the residue of any tobacco product including chewing tobacco on a VIA bus or other VIA vehicle or at a VIA facility or on VIA property, except as allowed in designated areas.
- Consume any alcoholic beverage or possess an open container of any alcoholic beverage on a VIA bus or other VIA vehicle or at a VIA facility or on VIA property.
- Eating on a VIA bus or other VIA vehicle unless medically necessary.
- Drinking beverages on a VIA bus or other VIA vehicle without using a spill-proof or screw-top container.
- Engage in disruptive, disturbing behavior including: loud conversation, profanity, rude insults or operating any electronic device used for sound (radio, MP3 player, etc.) without an earphone(s).p
- Take any animal onto a VIA bus or other VIA vehicle unless the animals purpose is to assist a person with a disability, or unless the animal is in training to assist a person with a disability, or unless the animal is secured in a container sufficient to contain the animal.
- Carry or possess any illegal weapon.
- Possess or transport any explosive, flammable liquid, combustible material or other dangerous substance such as gasoline, kerosene or propane.
- Litter.
- Vandalize any VIA bus or other VIA vehicle, VIA facility or VIA property by writing, marking, scribbling, defacing or causing destruction to the bus, vehicle, facility or property in any manner.
- Beg, solicit or panhandle from another person.
- Spitting, urinating, defecating or exposing ones anus, breasts or genitals.
- Illegally possess, use, distribute or sell any controlled substance.
- Engage in any horseplay or fighting.ipt
- Ride a VIA bus or other VIA vehicle without evidence that the proper fare has been paid.
- Unauthorized presence on a VIA bus or other VIA vehicle, VIA facility, or VIA property after hours of operation.
- Unauthorized use of a VIA bus or other VIA vehicle, VIA facility or VIA property.
- Interfering with the operation of a VIA bus or other VIA vehicle.
A person who violates one or more of these regulations may be warned and/or ordered to leave the VIA bus or other VIA vehicle, VIA facility, or VIA property immediately by a VIA Police Officer or a VIA Bus or Paratransit Supervisor. Situations where a person refuses to leave a VIA bus or other VIA vehicle, VIA facility or VIA property after being ordered to do so may be handled by VIA Police or other appropriate law enforcement agencies. In the case of a violation of Section 2.02 (a)(15), riding a VIA vehicle without evidence of having paid the proper fare, such situations may be handled in accordance with Texas Transportation Code, Section 451.0611.
This section does not seek to limit or conflict with any federal, state, or local law or ordinance; or to prevent any law enforcement agency or entity from taking any lawful action against any person on a VIA bus or other VIA vehicle, VIA facility, or VIA property.

"No shots, no school, no kidding"-- that's the strict policy most districts are taking when it comes to making sure that all students are vaccinated before classes start next Monday. Saturday, August 21st is the last day for parents to get their students' immunizations before they go back to school. 08/20 - Citrus at Hotel Valencia Riverwalk-Peppered Sika Venison Chop w/ TX Caviar
Peppered Sika Chop with Oak Hill Farms Texas Caviar
Makes 4-6 Appetizers
For the Venison
1 rack 1-2 lb of Sika Venison (any other game rack or lamb would work here also), cut into single rib chops
Salt and Coarse Ground Pepper
Olive Oil for cooking
For the Caviar:
1 oz chopped red onion, very fine
1 oz chopped red pepper, very fine
1 oz chopped green pepper, very fine
1 oz chopped cilantro, very fine
1 oz, chopped roasted or pan sauted mushroom
Dash cumin
Dash oregano flake
Juice of 1 lime, plus more to taste if needed
1 12 oz package Oak Hill Farms purple hull or black-eyed peas, fresh, cooked for about 30-40 minutes over medium heat with salt and pepper, cooled
Extra Virgin Olive Oil, or Mesquite infused Oil, Texas Olive Ranch preferably
For the Vinaigrette:
Juice of 1 lime
1 oz mint
1 oz cilantro
Olive oil
Pinch garlic if desired
cup water
1 Tab sugar
Salt and pepper to taste
For the Caviar:
Mix all ingredients together and set aside for an hour to marry flavors.
For the vinaigrette:
Add all ingredients except oil to a blender, pure, blend in oil and taste for balance of acid, sweet, salt. Adjust seasonings if needed.
For the venison:
Salt and Pepper and sear Venison in a hot pan or grill 1 min per side being careful not to over cook the lean meat. Reserve.
Spoon some caviar into the center of the plate and push across. Top with two of the chops and drizzle vinaigrette.
If you want you can garnish with some cilantro leaves and tortilla chips for scooping up the caviar.

Breakfast Cookies
1/2 cup (1 stick) plus 6 tablespoons butter,softened
1/2 cup firmly packed brown sugar
1/4 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 cup whole wheat flour
cup all purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 cups old fashioned rolled oats
1 cup chopped unsalted nuts (almonds, pecans, walnuts, or amixture of your favorites)
1 cup dried cherriesOR dried blueberries OR your favorite dried fruit bit mixture
Heat your oven to 350.In a mixer, cream together the butter, brown sugar, granulated sugar, eggs andvanilla.
In a separate bowl, sift together the whole wheat flour, allpurpose flour, baking soda, cinnamon and salt. As the mixer is running, add theflour mixture to the creamed butter mixture by half cupfuls, mixing well. Turnthe mixer off, and stir in the oats, nuts and dried fruit.
Drop the cookie dough in rounded tablespoons onto anungreased cookie sheet. Bake for 10 minutes, until the cookies are golden brownand somewhat firm.
Makes 3 dozen cookies

Layered Vanilla Yogurt Parfaits
6 servings " serving size cup yogurt with cup fruit
Ingredients
3 cups plain nonfat yogurt
2 tsp vanilla extract
2 small envelopes of stevia
1 banana, sliced
1 cup halved green grapes
1 cup sliced strawberries
1/4 cup Grape-Nuts cereal
In a mixing bowl, blend yogurt, vanilla and stevia. Organize remaining ingredients in layers in individual parfait glasses. Bottom layer is yogurt, and ending with yogurt and sprinkle of grape-nuts. Serve immediately.
