Lemon twist or cherry for garnish

Pour ingredients into tall glass of ice.  Garnish with lemon or cherry

1oz. Freshly Squeezed Lime Juice

1oz. Agave Nectar

Pour Canadian Mist, Lime Juice and Agave Nectar over ice in cocktail shaker.  Shake and pour through strainer into a Margarita glass.  Garnish with a lime wheel.

03/05 - U.S. Census 2010 Employment

  Job seekers looking for something part-time have a great opportunity to work for the U.S. Census.  Census officials say they need to hire 4,500 people by next month to work as census takers.  They are especially looking to hire people who live within Loop 410 because they say it's helpful for census takers to be from the community they will be working in. Officials say census takers are paid between $10.50 to $17.00 an hour.

03/04 - Chef Michael Flores-Tilapia Veracruz Style

Tilapia Veracruz Style

This recipe comes from the shores of Mexico and is probably one of the easiest fish dishes to make.  Chef Flores suggests serving it with white rice that is studded with peas, corn, and/or carrots.

 

 

4-6  4 ounce tilapia fillets

Salt

Cumin

3 tablespoons avocado oil

a white onion (about 1 c.), chopped

7 garlic cloves, sliced thin

2 jalapenos, fresh, thinly sliced (or to taste)

3 tomatoes, chopped

1 cup green olives, sliced

Juice of 1 lemon

1 bunch cilantro, roughly chopped

 

 

Preheat your oven to 350 degrees. Place the fish fillets in a 13" x 9", non-reactive pan (i.e.,Pyrex) and sprinkle with salt and cumin.

Heat the oil in a saute pan over medium high heat.  Add the onion and cook for one minute.  Next add the garlic and jalapeno and continue cooking for one more minute.  Add the tomatoes next and saute for approximately four minutes.  Finally add the sliced olives (Chef Flores likes using large, whole olives that I then slice into three pieces.) and lemon juice.  Taste and adjust the salt if necessary.


Pour the sauce over the seasoned fillets and bake, uncovered for 25 minutes.  Sprinkle the cilantro over the entire dish when done.  Serve atop white rice or with hot corn tortillas.

 

Serves 4-6

New law affects 18- to 24-year-old driver license applicants

Starting March 1, 2010, driver license applicants between the ages of 18
and 24 must complete an approved driver education course and a driving
skills test to become a licensed driver in Texas.  Applicants must

Pilsbury Grands Golden Wheat Biscuits

12 ounces Egg Substitute

cup 2% milk Sharp cheddar cheese, grated

6 slices of Center cut or turkey bacon, cooked and crumbled

No Fat Country White Gravy, prepared

 

1)      Preheatoven to 375 degrees.  Spray muffin tinwith non stick cooking spray.

2)      Separateeach biscuit in half.  Press each of thebiscuit halves into the bottom and up the sides of each muffin cup.

3)      Sprinkle1 Tbsp bacon crumbles into each muffin cup, followed by 1 Tbsp. of cheese.

4)      Filleach muffin cup with approx. 2 Tbsp egg substitute.

5)      Bakein oven for 18-20 minutes.

6)      Servewith country gravy.

HEB SPINACH, MANDARIN, & STRAWBERRY SALAD

 

Ingredients: Makes 6 servings - 1 cup each

- 4 cups fresh spinach, washed " HEB Brand

- 1 cup canned Hill Country mandarin oranges

- 1 cup fresh strawberries, washed, sliced

- 4 tablespoons toasted chopped walnuts

- 2 TBS feta cheese

 

Preparation:

- Place all ingredients in large bowl.

- Lightly toss all ingredients. The juice from the fruits isyour dressing (no additional dressing is needed!)

- Spoon into salad bowls and enjoy!
